If you’ve ever been to Italy and eaten pizza made and cooked the traditional way, you’ll know that the UK chain restaurants who claim to be experts and the pizzas you can pick up in the supermarket have a long way to go before they start being anything like what the Italians would recognise as one of their most famous culinary exports. It’s a food that’s almost as old as time itself: flatbreads with a variety of toppings have been eaten since the Neolithic era and it’s still a staple and favourite thousands of years later – we suppose it goes to show that the good stuff really sticks around!
Rob Parson’s hands-on appreciation of proper pizza followed the combination of disappointment in production-line pizzas on the market and the chance discovery of an article he found on building your own wood-fired oven a decade ago. Following some research, he set himself the challenge of building the real McCoy for him and his family and “the Pit” was born. It was instantly way too good to be kept a secret and Rob and Maria would throw parties and host family gatherings which they were so popular and well-received that, on retiring 2 years ago, he decided that maybe a new venture was calling…
The first investment was a mobile oven that could reach a blistering 500 degrees celsius and cook fresh, delicious pizza in only around 90 seconds – the traditional way – and Pizza-Ria started trading at food festivals, carnivals and events all over south Wales. Word of their skills quickly spread and before long, they were providing wedding and event catering and also regularly appear at Welsh Cycling events.
The oven can provide a lot more than pizza: slow-cooked joints and fresh bread are cooked to perfection and the team are extremely proud of their 5-star hygiene award and are members of the National Caterer’s Association. Their traditional savoury pizzas with a variety of fresh, tasty toppings are partnered by the more unusual sweet, dessert pizzas that they make and sell; how about really indulging and finishing off with one topped with Nutella, fresh fruit or homemade butterscotch sauce?
More innovation is imminent as Pizza-Ria will soon be providing pizza with even more of their own input when their own freshly-made mozzarella, ricotta and soft cheeses start production and head out on hot, fresh pizzas at events far and wide: get ready to taste the difference!
